It’s true — poutine râpée may not be the most eye-catching dish… and Raphaël Butler is the first to admit it! But behind this unusual-looking dumpling hides a true gem of Acadian cuisine.

Made from a mix of grated potatoes (both raw and cooked), stuffed with a bit of salted meat, poutine râpée is boiled for hours before being served. Some enjoy it with just salt and pepper, others swear by molasses or brown sugar… everyone has their tradition!

For Raphaël, who plays Beausoleil in Évangéline | The Musical, poutine râpée is above all a taste of childhood: “It’s a dish full of memories. I’ll have one or two a year… but no more!”
